Coconut Mango Rice

½ cup long-grain white rice
½ cup water
½ cup coconut milk
1 T. sugar
Pinch of salt


Add cut up Mango

Bring to a boil in a saucepan over medium heat. Reduce heat to low, cover, and simmer until tender, 15-20 minutes. Off heat, let stand (covered) 5 minutes; fluff with a fork.Makes 2 cups;
